Plums

Plums make the ultimate crumble!

Preheat oven to 200c, Gas Mark 6.

Take 800g plums and cut in half to remove the stones (though you’ll be forgiven for leaving them in if you are using damsons).

Put the fruit in a large, shallow baking dish and sprinkle over some sugar – something in the region of 50g or a little more should be enough.

Now take 150g plain flour and 100g butter and rub together with your fingers until it looks like breadcrumbs, then stir in 75g caster sugar.

Sprinkle the crumbs with a spoonful of water and stir it through with a fork. Then scatter the mixture over the fruit quite loosely. Bake for 35 minutes or thereabouts until golden.
